July Recipes / Juli Rezepte

Hope you enjoyed our second month of preparing recipes from Hugh Fearnley-Whittingstall´s “River Cottage Everyday Veg”!

Now onto the third month and the ten recipes for the month of July:

6. From the chapter "Store-Cupboard Suppers"
Tomato, thyme and goat´s cheese tart (page 216)

7. From the chapter "Pasta & Rice":
Pasta with raw tomato (page 254)

8. From the chapter "Mezze & Tapas":
 Marinated courgettes (zucchini) with mozzarella (page 314)

9. From the chapter "Roast, Grill & Barbecue":
Chargrilled summer veg (page 332)

10. From the chapter "Sweet Asides":
Chocolate and beetroot ice cream
OR
Pea and mint ice cream (page 397)

There are lots of tomatoes in there - considering that we are in the midst of summer, they are at their best right now, so the recipe choices mirror that fact.

  1. Hi Andrea! The selections sound good I don't have my book with me on vacation (what wadi thinking?), but the aubergine, pasta with tomatoes, and the tomato tart. I may end up with others for extra credit! :)

Dear Candy, make sure to enjoy your vacation and get some well-deserved rest - do not worry about the recipes for this month but, of course, we would all be delighted if you made one or the other recipe such as the aubergine parmigiana, the tomato tart and the pasta with raw tomatoes - no worries, though...

  2. So many wonderful recipes, it's hard to choose!

    I"ll be making the Shaved summer vegetables, Summer garden soup, Bruschetta with fava beans and asparagus, and definitely the Chocolate beet ice cream (Can't wait to try this one!)

    1. Hope you had a wonderful Fourth of July, dear Cathleen - ah, anoether one for the ice cream...fabulosu choices, my dear. Personally, I believe that baking a Black Forest Cake while the German team plays the French team at the FIFA World Cup and I cannot bear to watch, helps...

  8. Hi Andrea, I will be posting my June recipes this week. I still think it was better to get through the busiest part of my Summer (May and June) and try my best than to not do anything at all. June recipes were late posting but I anticipate I will be "on deadline" for the rest of the year. I choose and am excited about making Eggplant Parmigiana, Panzanella and Pasta with Raw Tomatoes, in July.

  9. I will definitely make the eggplant parmesan and panzanella. They are two of my favorites and I love trying out different recipes for them. We'll see how many of the others I get to!

Mary, as I said in my previous comment with respect to the June recipes - I already feel bad about reminding and pushing and so on and I know that it is summer/vacation time but a lot of these recipes do scream for summer produce and I get a mild panic attack when I think about a make-up month after the first ten months with tons of summer veg as ingredients...so far so good though if nobody feels too pressured by me.

    I'm late on June, though I loved what I made. I want to try everything, but am short on time this month so am pretty sure I can commit to the panzanella, pasta with raw tomato, and maybe the ice cream. I have one weekend at home this month and dear friend visiting that weekend - maybe she will be up for a cooking marathon!
